We are very particular about soy sauce. Our special soy sauce is made with the utmost care to bring out the flavor of soybeans. We use our own soy sauce, which we have perfected through repeated trial and error in order to maximize the flavor and aroma of the soup. We are particular about our noodles. Kairikiya's special low-moisture noodles are made from flour carefully selected from among hundreds of varieties. The noodles are cut with a No. 24 square blade and aged at a specific temperature and humidity to achieve a perfect balance with the soup and a smooth texture.
